The first step in processing the fish is gutting and cleaning it. Our fish can be sold both as HOGs (head-on gutted) and HGs (head-off gutted). The fish is then packed with ice in special polystyrene boxes. Air packing is also available for orders, which are to be sent by plane to distant locations.
The fish can also be frozen or sent to secondary processing.
